Area of 1ha on the Causse d'Aumelas at an altitude of 300m (thermal amplitude favouring phenolic ripening). Slopes of clay-limestone and sandstone with low fertility, alternating between diaclase sandstone and a layer of clay, allowing good water management, which is necessary in this dry climate. Disbudding and green harvesting to limit yields to 18 hl/ha.
70% Syrah and 30% Grenache
The whole harvest is destemmed, crushed and then vinified. Maceration is carried out for 35 days to optimise the extraction of the raw material's potential.
The wine is aged for 20 months in oak barrels, with occasional stirring of the lees.
The result is a highly expressive wine, with an intense purple robe. The nose is complex, concentrated and rich, evoking spicy and balsamic notes. The attack is full and well-balanced, with very fine tannins.
enjoy young for its fruity aromas (3 to 4 years) or for its evolving aromas (10 years or more).

« Aromatic nose showing notes of dark cherries, plummy fruit and chocolate undertones. Well-judged oak use, with firm grainy tannins. »
